Most people blame their matcha when the texture is off. Usually, it's the whisk.
A good chasen doesn't just mix — it transforms. The Shin Chasen is carved from a single piece of natural dark bamboo, with 64 to 80 finely cut tines that flex just enough to break down every particle and pull air through the bowl. The result is a creamy, lump-free froth that a spoon or frother simply can't replicate.
It works for usucha (thin tea) and koicha (thick tea) both. Light enough to move fast, structured enough to hold its form. The grip is balanced and comfortable — once you find your rhythm with the "M" or "W" motion, it becomes the part of the ritual you don't think about anymore. You just do it.
Before first use, soak the tines in warm water for a few minutes to soften the tips. Rinse gently after each use, no soap, no dishwasher. Let it air dry — a chasen stand helps it hold its shape over time.

DO
- Store in a cool, dry place, away from heat, moisture, and sunlight
- After first use, refrigerate the matcha to preserve its color and flavor
- Keep the lid sealed tightly to prevent air and humidity from affecting the powder
- Use dry, clean utensils when scooping
- Consume within 1–2 months after opening for peak freshness
DON'T
- Leave the matcha open or unsealed
- Store near strong odors—matcha can easily absorb surrounding smells
- Use wet or damp spoons, as moisture may cause clumping or spoilage

For Matcha latte (single serve):
- Sift matcha: 3 g (0.07 oz)
- Add hot water: 15ml (0.5 oz) at 75-80°C (167-176°F), stir well then add another 30ml (1 oz)
- Whisk: vigorously 20 seconds, making an "M" shape
- Serve: with ice, 90 mL (3 oz) choice of milk then pour in the whisked matcha.
